Blanch the cauliflower, peas, and carrots in boiling salted water for 2-3 minutes until tender-crisp, then plunge into ice water to maintain vibrancy and texture.
In a small bowl, combine saffron with warm milk to infuse and release its color and aroma.
In a heavy-bottomed pot, heat ghee and sauté the sliced onions until golden brown. Reserve half for garnish.
