In a food processor, combine the pitted dates, pitted prunes, walnuts, almonds, shredded coconut, chia seeds, vanilla extract, and salt.
Pulse the mixture until it reaches a sticky and coarse dough-like consistency, scraping down the sides as necessary.
Once fully combined, take a tablespoon of mixture and roll it into a ball using your hands. Repeat until all the mixture is formed into balls.
If desired, roll the energy balls in extra shredded coconut for an added touch.
Place the energy balls on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
